Yummy Homemade Chicken Noodle Soup
I like to call this my 'Green & White Chicken Noodle Soup' -- it's very pretty, for a Soup!
So this is my favorite new Chicken Noodle Soup, and I wish I'd thought of this years ago, so I thought I'd tell my lovely Readers about it, so you can add it to your Favorites List! The Kids love it, too!
Ingredients:
1/2 Package of Tortiglioni Noodles (the curly ones!)
4 Heaping Tablespoons of Chicken OXO
6 Tablespoons of Dried Parsley Flakes
or
a Bunch of Fresh Parsley, Chopped
Celery Stalk, Diced
1 Onion, Diced
4 - 6 Green Onions, chopped
Directions:
Step 1: Put on a Big Pot of Water -- about 3/4 of the way full.
Step 2: While you're waiting for the Water to Boil, chop up an Onion, some Green Onions, the Celery and the Parsley, should it be the Fresh Parsley.
Step 3: Toss the OXO into the Boiling Water, and all the Veggies. Pour in Half a Box of the Tortiglioni Pasta Noodles, and stir well.
Step 4: Turn the Soup down and let it Simmer for about 20 Minutes.
This is such a tasty meal -- you can throw in some Chicken if you like, or any other Veggies you happen to be fond of -- the more veggies, the better.
You can also make this very simply by just using the Chicken OXO and the Parsley, if you're in a real hurry.
You know I love Onions as a 'cure-all' for Colds and Viruses, so this is a great meal if you feel like you might be coming down with something... or you need a good 'pick-me-up' meal.
